Cauliflower “Fried Rice”


This is an amazing recipe which substitutes grated cauliflower for rice.  It has the same look as rice, and tastes great, without all the calories!  You won’t believe your taste buds!  You have got to try it!  I made it as a side dish to the Turkey and Veggie Loaf and left it for my kids to eat for dinner.  The entire pan was gone when I got home!

Cauliflower “Fried Rice”

1 head of cauliflower, washed well and cut into florets

1 medium onion, diced small

2 eggs, beaten

2 C. frozen mixed veggies

1 tsp. salt, or 2 Tbsp. soy sauce

Grate the cauliflower florets in a food processor with the grating disc.

Heat oil in a large sauté pan.  Add onion and sauté for 2-3 minutes until the onion is soft and just starting to take on color.  Add the grated cauliflower to the pan and continue to stir for another 2-3 minutes, until the cauliflower is hot.  Make a well in the center of the pan and pour in the beaten eggs.

Stir the eggs in the middle of the pan, until they start to cook, and slowly incorporate the cauliflower, stirring continuously, so the egg breaks up into tiny cooked pieces with the cauliflower.

Add the frozen veggies, and continue to stir until the veggies defrost.  Add the salt or soy sauce, as desired.  Serve as accompaniment to Turkey and Veggie Loaf, fish, or eat alone! Enjoy!
