Passover Apricot Walnut Bars

So it’s been tough cooking dinner at home this week.  I’m in the middle of passover preparations, and not really trying hard to feed the family dinner.  It’s a problem.  But I have been baking a lot, so I will share with you another kosher for passover dessert that you can enjoy next week!  My kids will find something to eat, or we will go out.  Don’t worry.

Apricot Walnut Bars

Apricot Walnut Bar

1 C. cake meal

1/3 C. potato starch

2/3 C. sugar

1/2 tsp. cinnamon

1/2 tsp. salt

1 1/2 sticks margarine

2 egg yolks

1 tsp. vanilla

3/4 C. apricot preserves

3/4 C. chopped walnuts

Preheat oven to 350 degrees.  Combine cake meal, potato starch, sugar, cinnamon and salt in the bowl of a food processor.  Pulse once or twice to combine.  Add margarine in chunks, and pulse until crumbly.  Add yolks and vanilla and continue to process until dough comes together.  Press 3/4 of the dough on bottom of a 9×9 inch baking pan.  Spread apricot preserves on top.  Crumble remaining dough together with the walnuts, and sprinkle on top of preserves, to cover. Bake 25-30 minutes.  When cool, cut into small squares.  Enjoy!
