Turkey and Veggie Loaf

I am always looking for new ways to serve turkey and this recipe is a winner! Ground turkey with a whole bunch of veggies.  It is moist and delicious, easy to prepare and I know you will love it!  It is pictured here, served on a bed of Cauliflower “Fried Rice”, which makes a great no-carb accompaniment, while adding even more veggies to dinner!  (Recipe on the blog)  Of course you can always go traditional and serve the turkey with mashed potatoes! This recipe makes a 9×13 pan, or you can divide into two loaf, or round pans.  You can bake one now, and freeze one, uncooked for another night.

Turkey and Veggie Loaf

2 Tbsp. olive oil

3 stalks celery, diced small

1 medium onion, diced small

1 (10 oz.) box frozen chopped spinach, defrosted and squeezed dry

4 lbs. ground turkey

2 eggs, slightly beaten

1/2 C. flavored bread crumbs

1 tsp. garlic powder

1 tsp. paprika

1/4 tsp. turmeric

1/2 tsp. salt



1 Tbsp. ketchup

1 Tsp. mustard

1 Tbsp. honey or brown sugar

1-2 shakes of hot sauce

Preheat oven to 350 degrees F.  Heat oil in a pan and sauté the celery and onions  for 2-3 minutes, until softened.  Add spinach and stir to combine. Set aside to cool.  Combine turkey, eggs, bread crumbs, paprika, garlic powder and salt.   Add in cooled vegetables.

Press into desired pan.

Bake covered for 45 minutes, then carefully uncover and brush on glaze.  Bake an additional 15 minutes uncovered.  There may be liquid at the bottom of pan, so just pour off carefully. Enjoy!
